INGREDIENTS
- 1 tortilla wrap – try to get wholegrain since its healthier
- 2 Spoons Coriander cashew dip
- 1/4 medium red onion
- 1/5 red & green peppers
- Cheese or vegan cheese (optional)
- Sprinkle of salt
- Sprinkle of pepper
METHOD
- Cut all the vegetables into small diced blocks.
- On a pan, add the wrap. Spread the dip (you can use a pasta sauce if you’re very lazy). Add the vegetables. You might be tempted to wack the heat on high, but your wrap will get burnt and your vegetables won’t get cooked. Cook this on a medium heat for 5 minutes. You also wanna keep the heat low so you don’t accidentally burn yourself.
- Add cheese and let that cook for a minute longer to melt. Sprinkle some salt and pepper. Serve.
