- Cooked rice from the fridge
- 1/2 cup kimchi
- Block of tofu
- 3 blocks frozen spinach
- 1 clove garlic
- 1 tablespoon gochujang
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt as preferred
Method
- Add one tablespoon oil in a pan. Add in chopped tofu. Let that cook for a few minutes.
- Meantime chop up the kimchi and any spring onions if you have that. If you’re using frozen spinach put that in a bowl with limited boiling water (a few tablespoons).
- Once the tofu is cooked, toss in the kimchi, gochujang and soy sauce. Mix. Toss in the spinach too and let it cook for 2 minutes.
- Add in the rice. Cook for a few minutes together. Switch off the heat. Taste for salt. Garnish with sesame oil, sesame seeds and spring onions if you have that. Enjoy!
