  • Cooked rice from the fridge
  • 1/2 cup kimchi
  • Block of tofu
  • 3 blocks frozen spinach
  • 1 clove garlic
  • 1 tablespoon gochujang
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt as preferred

Method

  1. Add one tablespoon oil in a pan. Add in chopped tofu. Let that cook for a few minutes.
  2. Meantime chop up the kimchi and any spring onions if you have that. If you’re using frozen spinach put that in a bowl with limited boiling water (a few tablespoons).
  3. Once the tofu is cooked, toss in the kimchi, gochujang and soy sauce. Mix. Toss in the spinach too and let it cook for 2 minutes.
  4. Add in the rice. Cook for a few minutes together. Switch off the heat. Taste for salt. Garnish with sesame oil, sesame seeds and spring onions if you have that. Enjoy!
